Chocolate Chip Banana Muffins

Whether enjoyed for breakfast or as an afternoon snack, these Chocolate Banana Muffins deliver a perfect balance of texture, sweetness, and deep flavor.

Ingredients

Dry Ingredients

  • 2 1/2 cups all purpose flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 1/12 tsp cinnamon

Wet Ingredients

  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 6 tbsp melted butter
  • 1 egg
  • 1 1/2 tsp vanilla extract

Additions

  • 2-3 ripe bananas, torn into chunks
  • 12-16 oz chocolate chops, chunks or both

Instructions

  • In a medium bowl, sift together flour, baking powder and salt. Set aside.
  • In a large mixing bowl, combine melted butter and sugar.
  • Add egg, milk and vanilla to the sugar mixture, incorporating fully.
  • Add in dry ingredients and combine.
  • Add banana to mixture and combine. You should still see pieces of banana.
  • Fold in chocolate chips.
  • Scoop batter into lined muffin tin, filling about 2/3 full.
  • top each muffin with additional chocolate chips and a sprinkle of cinnamon sugar (this is optional).
  • Allow the batter to rest for 30 minutes prior to baking.
  • Preheat the oven to 425°F.
  • Bake muffins for 7-8 minutes, until a dome forms. Turn the oven down to 350°F and bake for an additional 12-13 minutes or until a toothpick comes out clean.
  • Cool muffins in tin for 10 minutes and the move to a wire rack to cool completely.

Notes

Since there is fresh fruit in these muffins, I recommend storing them in a air tight container in the refrigerator.  They are best served warm with a small bit of butter for extra decadence. Enjoy!
